Roasted Chicken with Lemon and Thyme

*prepare your chicken...

*prepare your veggies... 

 *prep butter or margarine...

*introducing kohlrabi aka german turnip... 



*rub your chicken inside and out with salt and pepper... 









*rub your chicken with thyme and butter... outside, inside and underneath the skin... 



*put lemon wedges, white onion, onion leeks and celery inside the chicken cavity... 










*truss your chicken using a twine... binding the legs together bringing the twine to the breast... tucking the wings in the process... or do as you please... hehe :)




*on the base of your pan... a mirepoix is enough... carrot+celery+white onions... but...   

*you can add kholrabi 

*yellow bell pepper, onion leeks... 


*drizzle with olive oil and salt and pepper... 



*roast in broiler setting... 


*brush with drippings every 10 minutes to prevent drying...


*cover when done... let it rest...
