rainy day salad 1 (hello rain salad): lettuce, canistel (aka chesa), turnip and coconut macaroons in cashew fruit extract and honey vinaigrette...

*cashew fruit... not so good as a fruit itself... so i just used the extract...
*macerate the body to extract the juice...
*honey with the cashew extract...
*iceberg lettuce...
*chesa... aka... canistel... aka... Pouteria campechiana... google it...
*it has hard-boiled egg yolk texture that easily crumbles... that tastes sweet...
*crumble on top of lettuce...
*cubed turnip aka jicama...
*i just so happen to have coconut macaroon... a Philippine delicacy... crumble on top as well... this adds interesting coconut-y taste...
*drizzle with your cashew extract and honey mixture...
*this turns out to be very sweet... so i would suggest to use vinegar based vinaigrette...
