*cut the fronds (young leaves) of ferns, these are the ones we are going to use... then blanch for a few minutes...
*prepare your vinaigrette... mix together vinegar, red onion, tomato, chili pepper, ground black pepper, sugar according to preferred taste...
*toss in to your greens and tomatoes...
