beef and beet stew with mirepoix

*prep your veggies...

*1 kilo of beef (rib part)... season with salt and pepper... 

 *chop your celery stalk


*chop your carrot... 


*chop your white onions... 


*mirepoix: carrot, white onion, celery... 

*brown your beef with olive oil in a pot... 




*add in your mirepoix and a bay leaf... 

*add in your water... 

*allow to boil... then simmer until beef is tender... season with salt and pepper to desired taste... 


*chop in your beet... 



*when beef is tender... add beet into the stew... 


*cook until beet is tender...
  

*cut your head of cabbage into small quarters...

*drop into the stew... cover... then remove from heat... SERVE HOT on a RAINY DAY! 














beets taste like japanese sweet corn when cooked... perfect for beef stew...
